Lemon Blueberry Overnight Oats

Fighting the winter blues yet? Miss seeing the sun in the Chicagoland area? This cold and gloomy weather has got me wanting some bright tasty foods. We can’t control the weather, but we CAN control what we nourish ourselves with :-) so, may I introduce, the beautiful, the flavorful, the nourishing Lemon Blueberry Overnight Oats!

let’s start with the lemon

Did you know it is Citrus season? You might have notices how there are three to four types of oranges in the grocery store and A LOT of them. Grapefruit has been another favorite in the our kitchen, seriously so good. How do you eat your Grapefruit? I am old school, cut in half, then use a special ‘grapefruit’ knife to cut out the sections. Work, but totally worth it. I would have to say the juice is my favorite part though. Anyway, citrus season is hear and I am fully embracing it, this recipe is only one way.

Even though we love it being citrus season, I miss the summer berries season. Citrus fruits might be plentiful in the grocery store but berries are not. I mean this completely makes sense due to the seasonality but fear not, I have a solution for you. When looking for berries, walk past the produce straight to the frozen section. Frozen fruit is JUST as nourishing as fresh AND, in the winter, I think better then fresh at times due to frozen section blueberries were frozen during peak season. In this recipe, I used both fresh and frozen blueberries. Fresh to top the oats (making it all look pretty) and frozen actually mixed in. But if you don’t care what is looks like, just grab a bag of frozen blueberries, they are cheaper, last forever and probably will taste better. Add frozen blueberries to you oatmeal, oats, yogurts, pop in microwave for :30 for a DIY jam or eat by themselves (like Gwen loves to do, but I warn you, it can get messy).

Why do I love overnight oats? Well, they taste delicious, are super nutrient dense, your entire omega-3 daily requirement in one serving, super satisfying, a grab and go option and versatile (so many different flavor combos) to name a few :-)

Make Sunday or Monday night and enjoy for breakfast, lunch or a substantial snack. Maybe if you close your eyes you can almost imagine the warm sun on your face. Hey, it could happen, if not, at least you are eating some delicious food and nourishing your body.
