Peach Season Celebration: Dietitian Recipe Round-Up

I bit into my first juicy, sweet and perfectly soft peach today and it was heavenly. Peach season is here, running from May through September and in my eyes (or should I say belly) is the best time to eat peaches. I haven’t had a peach since last summer as they just don’t taste as good out of season. I don’t know if you’ve noticed but over the last month strawberries have been insanely good and cheaper due to it being Strawberry season. Now, as we move into peach season (yeah!!), I want to help you all take full advantage of it, so I teamed up with 13 other badass Dietitians to share some delicious and simple peach recipes. Of course, you can simply eat peaches as is, but as I plan to go peach crazy over the next few months, there are tons of fun ways to add them to your dishes.

SUMMER PEACH SMOOTHIE

This refreshing recipe is a perfect summer breakfast or snack the entire family will love. Registered Dietitian, Stephanie Van’t Zelfden from Nutrition Hungry provides families with simple and factual nutrition advice and recipes.

With only four ingredient this is super simple and easy. I will for sure going to be adding this to my smoothie list, and most likely add a few other goodies (hemp seeds, flax meal, and maybe even swapping out coconut milk with oat/cow’s milk).

Even though it may not technically be summer (in Chicago) yet, I have been loving summer salads lately. This flavorful summer salad is a fun twist on the traditional Caprese Salad. A bonus, it is super simple, quick and can be a side salad or the main dish with some protein added in.

Small batch Honey Peach crisp

I am a big fan of Kelly Jones so when she sent me her peach crisp recipe, I knew it would be going on the blog. Kelly is a sports dietitian, mom and also makes delicious recipes. We have so much in common, am I right?

Kelly took a Fall classic (Apple Crisp) and repurposed it to a new summer classic, Peach Crisp. Crisp, not cobbler due to the streusel style topping rather than biscuit for a cobbler. I am going to try this in my iron cast skillet on the Traeger so I don’t even have to turn my oven on.

The peaches look a little different due to them being white peaches, if you can get your hands on them, I highly recommend some.

Peach, corn & green chile salsa

If you have not tried peach salsa, you are in for a treat with this sweet and spicy recipe.

Enjoy with tortilla chips or top grilled salmon/white fish with it, use it as a burrito bowl topping or serve it over toast with ricotta cheese as a snack or appetizer. So versatile, so fresh and SO in season!

Peach & prosciutto pizza Carrese

A few things I love about summer, peaches so juicy you need a napkin and have to wash your hand right after and sweet off-the-vine cherry tomatoes. There is no comparing store bought tomatoes with your back yard, Farmer’s Market or CSA box tomatoes. This pizza, pairing the two, will be DELISH!

It is not only delicious but again, super simple and easy to throw together. Feel free to use store-bought or NAAN for an easy pizza dough if short on time.

Speaking of pizza, I also, wanted to share one of my favorite chefs (not RD) Arugula Peach Ricotta Pizza with Crispy Bacon. I mean how can you not love Half Baked Harvest?

I made blueberry muffins a few weeks ago and not going to lie after looking at these peach muffins, I think these are on my upcoming baking list.

Top with some butter OR break up and top vanilla greek yogurt with them. Yum!!

Peach and Avocado Sunshine Salad

This fresh and flavorful summer salad is made with juicy peaches, luscious avocado, lemon zest and juice, olive oil, and chopped chives. Aka this is SUPER simple and packed with nutrition and flavors as it uses all fresh ingredients.

Liz recommends serving it as a side dish with grilled fish or chicken or just eat it straight up with a spoon!

I have all these ingredients in my kitchen and I would not be surprised my dunking some tortilla chips in this later today.

So simple, so delicious! A theme to these recipes, wouldn’t you say? Grilling peaches is one of my favorite way to enjoy them, so simple and the grill brings out the sweetness even more. Have by themselves, add a dollop of ice cream for a delicious dessert or have with vanilla greek yogurt with a yummy snack.

Raise your hand if you love quesadillas! Both hands would be in the air for my family and I. One thing I love about quesadillas is you can have them plain or play them up with whatever is in season or whatever you have on hand. Adding peaches add a little sweetness to these cheesy, fiber and protein packed quesadillas. Can’t wait to try!

Beans (I think I am going to go with white beans when I make it), zucchini, cheese, tortillas, and peaches, this is a simple, nutrient dense and delicious recipe for lunch, dinner or a snack!

Caramelized peach arugula salad

If you know me, you know I love loaded salads! So, when I saw this peach arugula salad I not only knew I would be making it but I wanted to share it with all of you.

This is the ultimate sweet and savory balanced meal, yeah! The peaches are marinated in a honey balsamic then combined with creamy goat cheese, quinoa, toasted pecans, and finished with a homemade creamy maple balsamic vinaigrette. You also have an option of adding chicken and hemp seeds to add in more protein.

Whether for tonight or your next family-friend BBQ, this salad will for sure be a show stopper at.

Honey Mustard Grilled Chicken Peach Kebobs

I mean, if you don’t think of summer when you see kebobs, I don’t know who you are ha ha. This combo is a brilliant idea if I have every seen one. Peaches are insanely delicious on the grill, then pair them with some chicken for flavor and juiciness, and red onion for crunch and flavor and you get quite a tasty combo.

Super excited to try this super easy recipe out our next cookout. I see the Chicken Peach Kebob meal completed with a loaded salad and corn on the cob. Anyone? Anyone?

Banana Peach Steel Cut Baked Oatmeal

Last but definitely not least I am going back to my favorite meal of the day, breakfast! Peaches in stove top rolled oats can be simple breakfast or you can get a little crazy and make this beauty. Seems like this recipe would be delicious hot or cold and a quick meal and or snack to have once made. Definitely will be trying this out and I am feeling the next day cold leftovers.

Side note: when I make my stovetop oatmeal I do 1c rolled oats, 2/3c milk, 2/3 water, cinnamon, 1 ripe banana broken into pieces. Then add flax meal, hemp seeds, and fruit & nut of choice. So in this posts case, I’d add peaches and walnut :-) Think I have my breakfast for tomorrow.
