Pumpkin Energy Balls
This week, Chicago has been cloudy, rainy with temps in the 50’s and 60’s. AKA the feels of Fall are most definitely present even if it is not technically here. So, of course, all these fall came rushing back to me in full force.
And so, with Fall right around the corner (slash here haha) pumpkins, apples, hard squashes and all things FALL will begin entering my kitchen, recipes and plates! As you may already know, I am a snack lover, choosing multiple snacks to make a meal and adding in snacks throughout the day when I am hungry. What better way to incorporate fall and my love for snacks and pumpkin than in a snack that is nourishing and tasty? If you like pumpkin, peanut butter and chocolatey greatness these are for you (I mean who doesn’t love those things haha)! Not only are these NO BAKE, but they are super quick and easy recipe for anyone to follow aka kid-friendly too my friends.
If you are a sweet lover like me, these babies do the job! I love being able to store them in an air-tight container in the fridge or freezer to quickly grab a few on busy days and be on my way. They are packed with pumpkin pie flavors and super nourishing ingredients like fiber, omega 3, and plant based protein and fats, helping me stay full so I can stay energized and focused throughout the day. The best part of this recipe is, you can find most of these ingredients right in your pantry! Feel free to swap out different nut butters and even add in hemp seeds, nuts and or pepitas.
The Ingredients & their benefits:
Old-fashioned oats are a must-have pantry staple, provide whole grains (can get gluten-free) with vitamins, minerals, energizing carbs and FIBER!
Ground flax meal will add some additional nutritional value including fiber, O3 FA’s, & protein.
Chia seeds contribute healthy fats, micronutrients, fiber, & protein.
Pumpkin is rich in Vitamins A & C, as well as potassium.
Peanut or Almond butter not only holds the whole recipe together but is also an additional Protein/Fat source
